Build Sequoia 15.0 and 15.1 separately since 15.0 is RC and about ot be released and 15.1 is still in beta.
Plus added Xcode 16 RC to the big runner image. But since it's RC put it first in the list so it's not default.

A follow-up to #145 . It seems right now only base variant preserves the symlink. `xcode` and `runner` are missing it and my guess it's due to disk resizing.
This change adds a validation script, so we verify `/Users/runner` folder exists in every variant.
